The fermentation of “Puer” tea demands a perfect mix of water, moisture and air. This provides the conditions for the development of microbes and the necessary fermentation.
The fermentation of broad leaf “Puer” tea produces a substance called theaflavin often called the soft-gold of tea.
Clinical experiments show that theaflavin reduces blood fat and cardiovascular disease among other benefits.
In animal experiments, the mice fed theaflavin had their blood fat reduced by 30% compared to the control group’s 10% blood fat reduction.
Due to the process of producing “Puer”, the tea may be stored as long as a century without losing its flavor or health enhancing benefits.
The 110 days of fermentation for “Puer” is important to achieve the best flavor and enhanced, health benefits—the time must not be shortened. The temperature and humidity must also be stable and many warehouses are built partially underground to achieve this.
I’ll bet you didn’t know much about the process the tea you may be drinking went through before filling your cup. The process to produce Puer tea represents almost two thousand years of China’s tea culture.
“Puer” got its name because it used to be sold in a town by the same name.

Puer tea is mellowed by aging, the period by which it is transported and stored.
The largest, tallest tea trees in the world grow in the mountains of Yunnan. This region also produces black, green, Oolong and other kinds of tea.
The leaves for “Puer” tea are divided into three sizes and the largest contain more of the health benefits attributed to “Puer” tea.
For centuries, the process of making tea from picking, to washing, to boiling, mixing, pressing, clustering, baking, and packing has been improved to enhance the flavor of the tea.

Dao Linyin, the governor of Xishuangbanna Dai Autonomous region in China says, “Puer tea contains many vitamins. Very few Puer drinkers get high blood pressure.”
Standards for selecting the thickest broad leaves for “Puer” tea means only about 30% of the tea leaves that are picked pass inspection to be processed into the final product. This selection process is important because the wrong leaves will have a negative impact on the fermentation process.
The fermentation step in the process of producing “Puer” tea takes 110 days.

My weekend cup of Numi Organic Pu’erh teareaches back into China and Tibet’s history almost two thousand years. The journey this tea takes starts in China’s Southwest Yunnan province along the border of Laos and Vietnam.
There are several varieties of tea — white, black, scented and green to name a few.
The mountainous region of southwest China in Yunnan Province produces a special tea called “Puer”.
The custom with “Puer” is to pick new tea and drink old tea. This refers to a practice unique for “Puer” tea of aging the tea in storage to obtain the unique flavor.
In addition, modern science has recognized “Puer” for its health benefits beyond black tea.
Chinese Puer tea – Part 1/3
In 225 A.D., when China was divided into the three kingdoms of Wei, Shu, and Wu, the prime minister of Shu led a military expedition to Yunnan.
Historical records say that many of the Shu troops came down with eye diseases. After they drank the boiled tea, it is believed that the troops were cured.
The leaves came from a tea tree in Yunnan. Over time, tea drinking for health benefits became a tradition in other areas of China including Tibet.
There is an old saying in Tibet. “Better three days without food than a day without tea.” Historical records show that Tibetans started drinking tea during the Tang Dynasty (618-906 AD) in 641.
Tibet does not grow tea trees, so the famous Tea Horse Road from Tibet to Yunnan was opened. Over the centuries, tens of thousands of horses were traded with China for tea.
In the early 19th century, Emperor Daoguang named “Puer” tea as a “Divine Tribute to the Kingdom of Heaven”.

I haven’t gone skiing for more than a decade, and I probably should buy new boots and skis if I ski again, since my old pair of parabolic skis have been gathering dust in the garage far too long. I question if my aging legs will hold up.
Back in my powder days, I often skied two of Southern California’s more popular ski resorts, along with Mammoth Mountain in central California, in addition to Mount Bachelor and Mount Hood (both active volcanoes) in Oregon, and have had my share of days and nights skiing in blizzards far below zero.
I have never snowboarded but former students tell me it is easier than skiing. Maybe one day I will find out and I might do that in China.
Sexy Beijing’s reporter Rachel Dupuy went to Nanshan to see what was up in China’s newly forming snowboarding scene. What we discover from Beijing Beat: Riding China (the embedded video) is Beijing’s Nanshan ski area the winter of 2008 with a snowboarding competition that included $25,000 in prizes.
It appears that along with fast food such as McDonalds and Pizza Hut, China is adopting Western sports. In Tiger Woods smiles big while golfing in China, I wrote about China’s growing number of golf courses and mentioned Chinese golfers numbering more than 100,000 and taking to the sport with enthusiasm.
As for snowboarding and skiing,Fresh Peaks.com says, “Prices in China are still reasonably cheap…” However, “the decent ski resorts in China can be tricky to get to… If you say you want to go skiing or snowboarding in China, you have to really mean it.
“Getting to China’s largest ski resort (Yabuli) in Heilongjiang Province, for example, involves a 90-minute internal flight from Beijing, a two and a half hour train ride and a bus transfer.”
Board the World.com reports skiing in China is a relatively new activity; its first ski resort opened its doors to the public in 1996. Since then the industry has been rapidly growing, especially recently due to China’s new economic prosperity. New ski areas are opening up all the time and … sees a 30% increase in customers each year.”

On April 18, The New Yorker published The Grand Tour, a long piece about ordinary Chinese pouring out of China and visiting the world as tourists a few days at a time and Europe is the most popular destination.
Evan Osnos, The New Yorker’s correspondent in China, where he has lived since 2005, wrote the piece.
To research it, Osnos joined a “Classic European” Chinese bus tour that would “traverse five countries in ten days”. He was the only non-Chinese, and the 38 members of the tour ranged in age from six to seventy.
At 16 printed pages, it took me two sittings to read The Grand Tour, but I found it to be worth my time to learn how serious China is about joining the global community.
However, this transition did not come about easily.
An ancient Chinese proverb says, “You can be comfortable at home for a thousand days, or step out the door and run right into trouble.” Then Confucius threw guilt into the mix when he taught, “While your parents are alive, it is better not to travel far away.”
In fact, in the famous letter that Emperor Qianlong wrote to King George of Britain in 1793, he indicated there was no desire to have foreigners visit or live in China or for the Chinese to leave. “As your Ambassador can see for himself, we possess all things. I set no value on objects strange or ingenious, and have no use for your country’s manufactures.… The distinction between Chinese and barbarian is most strict, and your Ambassador’s request that barbarians shall be given full liberty to disseminate their religion is utterly unreasonable.”
In addition, Osnos said, Mao considered tourism anti-Socialist, so it wasn’t until 1978, a few years after his death, that Chinese started to gain approval to travel to other countries, and in 1997 the government allowed Chinese tourists to visit other counties in a “planned, organized and controlled manner”.
Thirteen years later in 2010, “Fifty-seven million Chinese traveled outside China,” Osnos wrote, “ranking China third worldwide in international tourism.”
During the tour, the first stop was in the modest German city of Trier, which the Chinese language guidebook described as the “Mecca of the Chinese people”. Trier was the birthplace of Karl Marx, and there was an early morning photo opportunity in front of the house where Marx was born.
In one conversation with another member of the tour, Osnos learns what Chinese think of the Marxist revolutionary ideas that ruled the country under Mao from 1949 to 1978. “We spent thirty years on what we now know was a disaster,” one of the Chinese tourists said.
As for middle class Chinese wanting to leave China to live in other countries, think again. In another conversation in the Swiss town of Interlaken, Osnos heard, “Other than different buildings, the Seine didn’t look all that different from the Huangpu (river in Shanghai). Subway? We have a subway. You name it, we’ve got it.”
A Chinese sanitation engineer on the tour could not help but notice in Milan, Italy the abundant graffiti and overstuffed trash bins. His comment, “If it was like this in Shanghai, old folks would be calling us all afternoon to complain.”
